Cactus Salad

Normex products needed: Can of sliced tender cactus, Corn tortillas


  • ●  1 can sliced tender cactus

  • ●  2-3 fresh medium tomatoes diced

  • ●  2-3 green onions chopped

  • ●  1 bunch of cilantro (coriander) chopped

  • ●  juice from 1 lime

  • ●  salt and pepper to taste

  • ●  1/4 teaspoon dried oregano

  • ●  2 Tablespoons vegetable oil

  • ●  1/4 cup crumbled Queso fresco, or queso cotija or Feta

  • ●  *Salsa verde (for optional kick)


  1. Open the can of tender sliced cactus. Place in strainer and rinse with cold water.

  2. Chop the green onions, tomatoes and cilantro. Set them aside.

  3. In a salad bowl, place the cactus leaves, onion, tomatoes, cilantro and dried oregano.

  4. Squeeze the juice of the lime over the salad. Add oil. Taste for salt and pepper and mix

    everything together.

  5. Sprinkle crumbled cheese and serve.

  6. Serve alone, on a tortilla or on a tostada* with homemade salsa

*To make a tostada: Place tortillas evenly on a baking sheet. Bake at 100 until golden and crispy.
