Tacos al pastor Recipe
Normex products needed: Achiote paste, ancho chiles, guajillo chiles, corn tortillas, homemade salsa verde
Ingredients Adobo ● 2 ancho chiles ● 3 guajillo chiles ● ½ onion ● 1 garlic clove ● 2 tsp black pepper ● ¼ tsp oregano ● ½ bar of achiote paste ● 2 ½ tsp de vinegar ● ½ tsp de salt ● ½ cup orange juice or ½ cup pinaple juice
Tacos ● 1 kilo pork shoulder (finely sliced) ● ½ onion (finely chopped) ● Chopped cilantro ● 1 pineapple ● Tortillas
Cooking process
Mix all the adobo ingredients and blend them until creamy Marinate the pork in the adobo sauce for at least 30 minutes (the more the better). Cut the pineapple into large chunks. Place the pork on top of the pineapple and secure with a stick. Oven: Cook at 175 degrees for an hour BBQ: Cook until pork is fully cooked (internal temp of 70 degrees). Place pork on tortillas, top it off with pineapple, onion and cilantro. Squeeze a lime on top and add salsa as desired.
