100 % Tobala agave, harvested in the mountains of the southern mountain range "Sierra Sur" of Oaxaca at approximately 8 years of age, in its ripe maturity.
Cooked in a conic stone pit oven underground with mesquite wood. Ground by millstone pulled by a horse.
Notes of cooked agave, wooden smoke and citric notes.
